Japanese Adzuki Bean Salad

  • 2 tsp tamari
  • 2 Tbsp rice vinegar
  • 2 tsp wasabi, to taste, powder
  • 3 Tbsp canola oil
  • 2 Tbsp dark sesame oil
  • 1 can (15 oz) adzuki beans, drained
  • 2 scallions, minced
  • 1 cucumber, chopped
  • 1/2 lb green beans, trimmed, halved, steamed and chilled
  • 2 cups organic salad greens mix
  • 1 cup watercress
  • 1 tsp sesame seeds
  • 1 tsp fresh chives

Combine first 5 ingredients in a bowl for the dressing. Mix in beans, scallions, cucumber and green beans. Chill. Place salad greens and watercress on serving plates. Top with bean mixture and sprinkle with sesame seeds and chives.
