'Skinny' Mashed Potatoes

  • 5 large potatoes, peeled and cut into 1 in. pieces
  • 1 can chicken stock

Boil potatoes and stock in a saucepan over high heat. Reduce heat to medium. Cover and cook 10 minutes or until potatoes are tender. Drain, reserving stock. Mash potatoes with 1-1/4 cup stock, adding more stock, if necessary, until potatoes are desired consistency. Season with salt and pepper to taste.
